If you have, where did you go? What did you do? How was it? What did you pack? How did you record your memories (still camera, video, diary, etc)? Do you have any tips for someone preparing to go?
I am going on an 8 day trek in southern Spain. I am SOO excited!

I've gone on a couple. My first one was a week of riding cross country in County Galway, Ireland and it was an amazing trip. The horse I rode was a full-blooded Irish Draught mare who was probably the single best horse I've ever riden. The facilities of the riding center we were based at were wonderful and they took great care of us on the trek. I kept a journal documenting all the things we did and posted several pictures on line. My second trip was a combination lessons/trail treks in Mallorca, Spain. I very much enjoyed this trip also, riding through the beautiful farmland and along the beaches of the Mediterrainian. The lessons were excellent and really helped me with securing my seat better. I even took my first jump and had a dressage lesson on an Andalusian stallion. It was so much fun.
As for packing, nearly everything I brought was in the way of riding clothing. Boots, helmet, gloves, a few pairs of breeches, jacket, etc... Bring stuff that you can layer so you can deal with iffy weather and get a rain jacket. I also had a good pair of jeans, a few tops and a nice pair of heels for going out at night, and a bathing suit for Mallorca since the riding center had a pool. I would also make sure to pack insect repellant, a good sunscreen and invest in a good pair of sports sunglasses that don't bounce.
Before leaving for your trip, just make sure that you have all of your documents in order - you should be notified by the tour where your pickup will be. I would invest in an english-style saddle-bag which is great for holding cameras, bottles of water. There are some good ones here, and they are definately worth the money.

You might also think about investing in a saddle cushion. We had one day in Ireland where we were in the saddle for almost seven hours and my backside was in serious pain by the time we were done. I was ready to tie a pillow to my butt!

can you use a coleman xtreme sports waterproof HD wearable helmet video camcorder to record normal videos?

The camcorder does not care what the subject is. Start recording and point the camera at the subject.
Video and audio quality may not be ideal. Just because the camera is being used to capture something other than sports stuff is not going to have the camera stop working...
